SUA Student Training at VETA MIKUMI

Students from Sokoine University of Agriculture (SUA) who are pursuing a Bachelor of Nutrition and Catering with Education (BNCE) attended a three-day culinary skills training program at VETA Mikumi. The training aimed to equip students with practical competencies required to meet the academic and professional demands of their degree programme. During the course, students were introduced to fundamental principles of kitchen operations, including kitchen layout and working zones, code of conduct in the kitchen, identification and handling of kitchen tools and equipment, menu planning and design, various cooking methods, and standardized food recipes.

Under the supervision of VETA tutors, students prepared a variety of dishes ranging from appetizers to desserts, completing a full three-course meal. The meals were developed using ingredients from different food groups, with careful consideration of nutritional quality to meet consumer needs. Throughout the food preparation process, students also applied essential knife skills to achieve appropriate shapes and sizes for different food items.

SUA sincerely acknowledges and appreciates the support and cooperation provided by the VETA staff in facilitating this valuable training experience.
